let’s talk….

Hi y’all,

I wanted to bring you my first ever, UPDATE PICTURE. AH I am so nervous… one, not even my husband knows my weight, but you’re about to see my hard work on the scale. Two, I am still so nervous to put myself out there, ya know…. There are only less than a handful of people, besides you all, who know about my efforts to overcome an eating addiction, poor choices and excuses, and my PCOS SYMPTOMS….  no one in my personal life knows about this blog and I like it that way…… it is easier to be judged by strangers than people I truly know, isn’t that weird.

Anyway, As you all know, I have been very very busy, but I have made it a real effort to start swimming 4-5 days a week an hr to an hr and fifteen minutes at a time! NOW, it has been about a month since I started, and I was a swimmer for 14 years, so swimming comes natural to me… I will share some of my work outs below, but I DO NOT SUGGEST ANYONE TO START OUT DOING LONG DISTANCE! As for the scale, it is still moving, not as fast, but it is moving! Having PCOS, I never thought I would be able to lose (a significant amount of) weight, so I never really gave it much effort, or stuck with it that is… But I am doing it, and if I can, SO CAN YOU. Never stop trying, never stop striving!

So here it is ladies and gent.. my start weight and my mid-way(ish) point. I still need and want to lose 45ish-50 more pounds, but I will tell ya, as a teenager who was so active in swimming, I was never below 155! So I am setting my goals high and I WILL CRUSH IT!

18033013_10154405822565887_8690546259785239666_n

Since swimming, I have seen more changes in my body than really the scale but hey I am okay with that. I am feeling better than ever and on the days I have really bad anxiety, swimming has given me back a healthy outlet to release my inner voices.

I don’t have set work-outs, I just swim and make it up as I go… yesterday, I literally swam for an hour without stopping until I felt like my anxiety was gone. Other days I know what kind of sets I want to do…

First and foremost, these are my must have(s) for swimming:

A kick board (kicks which works you legs and hips even you back and abs if you do dolphin kick and it’s killer) and a pull buoy and paddle board… everyday I swim I use these three tools throughout my sets!

So I will give you some examples of what I do in the pool:

1 example:         500 yard warm-up (slower pace, but build speed last 200y)

500 Pull (using pull buoy and paddle)

500 Kick ( 100 yard free kick, 100 yard dolphin every other 100y)

5-100 yard sprints (now I can’t sprint a full 100 yards yet, so I make sure to sprint in between the flag, aka ‘the red zone” and focus on my arms in between zones)

500 y Kick (same as above)

500 Yard SLOWWWWWW cool-down

Example 2:  500 yard warm up (slower building speed)

21-25 yard sprint (but rotating sprint just pulling, just kicking, and swimming full stroke)

600 yard (24 laps) warm down

Example 3:  500 Yard warm up (building speed)

400 yard pull

300 yard kick

200 yard full sprint (slow in red zone, fast in between)

500 yard cool down

So there you have it… I promise one day, when I am comfortable I will start sharing actual body progress but for now, I am still working to do better! I hope this post finds you doing well, and never stop giving up. Strive to do better and you will.

Until next time,

C

Wednesday: Truth

Well Hi Y’all!!!

I know I haven’t posted much…….. life has consumed me, last week was spring break and I actually spent it with my mother. We went to Round Top, Texas and shopped until we dropped! If y’all don’t know about the shopping there, google it. If you’re looking for rustic antique stuff, that is your place! and if you love Joanna Gaines as much as I do, this stuff is so Joanna, ha.

My son started swim lessons two days a week and gymnastics one day plus a Friday night out, type of program….. my weeks have been BUSY. Busy child, busy mom, plus school, plus a farm… remind me to breathe.

SO, now that we are caught up…. my weight.… this month…. ahhhhhh must I tell???!!!.

I think I have lost only like four pounds in the last three weeks… while it is still good because it isn’t a gain... I know I could have done better, I haven’t “worked out” since two weeks ago. Last week other than working around the farm, I kinda really lost it. Then last week on spring break,  I did eat PIZZA, a chickfila chicken biscuit, and half of my serving at the Blue Bell Ice Cream Factory.  I know, I know… but we are being honest here! The great news is, I am back on it this week and I joined the local YMCA to start SWIMMING AGAIN!!! AHHH my true love! I was a swimmer for 14 years and I miss that exercise so much! So the days my son goes to swim, I will swim for an hour, yay. Other days I can go to the gym and take any of the classes they offer, plus they have free childcare while you’re working out up to two hours a day. SWEET!

Let me tell ya, shopping for competitive swim suits (for lap swimming) was depressing… I still remember my suit size, and well I have gone up SEVERAL sizes since High School… ahhhhh, there is my motivation. I am just teasing, I know I am not the young girl I once was and probably will never be as athletic again, but it still hurts my heart that I allowed myself to gain weight considering how healthy and athletic I once was! Oh well life….

I promise I will do better this next coming week to produce more blogs.. I just haven’t felt inspired much. Maybe my mother distracts me or life consumed me, but the focus is back, the struggles are still real, but I am still fighting!!!!

Until next time, with all my love,

-C

I cheated

HI! Happy Sunday. As the title stated above, I cheated a bit, but not too much. Everyone has cravings from time-to-time, mine for the last two days have been pizza. GUESS WHAT, I had my pizza today. OK OKAY, I have goals to meet so I made cauliflower crust pepperoni pizza with REAL CHEESE (even though I said I would remain dairy free, but cheese!) IT WAS SO GOOD! My HUBBY EVEN LOVED IT!!! The photos I took may not be the best, but you will catch the drift. I got the recipe from my girl, Ree Drummond. I just love her!

16265369_10154178078070887_7124723092123558353_nI could only eat one of those slices, that cheese filled me up and I paired it with a power green salad with a little bit of EVOO and Balsalmic!

Ingredients:

  • 1 medium head cauliflower, cut into florets ( I used trader joe’s cauliflower rice and chopped it up even finer)
  • 1/4 cup grated Parmesan
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon kosher salt ( I didn’t use salt, because you know sodium )
  • 1 large egg
  • 2 cups freshly grated mozzarella
  • 1/4 cup Spicy Pizza Sauce, recipe follows
  • Fresh basil leaves, for garnish

Directions:

For the pizza: Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
Pulse the cauliflower florets in a food processor to a fine snowy powder (you should have about 2 1/2 cups). Transfer the processed cauliflower to a microwave-safe bowl and cover. Microwave until soft, 4 to 6 minutes. Transfer to a clean, dry kitchen towel and allow to cool.
When cool enough to handle, wrap the cauliflower in the towel and wring out as much moisture as possible, transferring to a second towel if necessary. In a large bowl, stir together the cauliflower, Parmesan, Italian seasoning, salt, egg and 1 cup of the mozzarella until well combined. Transfer to the prepared baking sheet and press into a 10-inch round. Bake until golden, 10 to 15 minutes.
Remove the crust from the oven and top with the Spicy Pizza Sauce and remaining 1 cup mozzarella. Bake until the cheese is melted and bubbly, 10 minutes more. Garnish with fresh basil leaves just before serving.

WORTH A TRY!!!!!

Happy Thursday.

16174874_10154166421655887_569954271769130858_n

Happy Thursday y’all! This week has flown by! I started the spring semester on Tuesday, and I am feeling so confident. I have applied for every scholarship I could find for this fall, so fingers crossed, this mama gets some help. I would love for nothing more to go to school and not have to worry about the financial part of doing it. Raising a family on one income can be challenging and many sacrifices are to be made, but never in my life would I take back those stresses. It is a blessing to have been with my son for his entire life. Day in, and day out, I have raised him. He is my world, he is my pride, and he is my muse.

ON TOP OF SCHOOL, drum roll please….. I AM DOWN ANOTHER THREE POUNDS! This Friday will be three weeks since I have put any my poison in my body. Everything I have consumed has been whole foods and I prepared it. I drink at least 80-100 OZ of water a day, sometimes more.. As for my workouts, I knock em out first thing in the morning. I always do abs, I’ll find YouTube videos or I have a free-trial to beachbody online. Then I do 30 minutes of yoga, and I noticed the difference in my strength and endurance. To finish it off, I’ll do a little bit of weights (very light, 8 lbs, 10 lbs and 15 pounds) Included is squats ect. things like that. I try to change it up. Also some days, I just go outside and play soccer with my son or if my hubby gets off a bit earlier, I jog or fast-walk. I just try to move as much as I can. I DO LOVE yoga though, even the beginners stage is hard for me, but I just like pushing myself. My son loves when I do yoga, he likes to climb on me or under me, it is a game to him. He will even get on the floor and do sit ups with me. It is very funny, but very cute. It gives me more drive to keep moving forward. That little boy sees me doing what I should be doing and now I am setting the example I need to set for him.

Trader Joe’s

If ya haven’t figured out Trader Joe’s is my love. It is like the grocery store version of Target. I go in for one thing and walk out with everything. Everything I buy is organic and is so much more AFFORDABLE than produce at the local Kroger’s or HEB.  Other than Trader Joe’s, for food I shop at Kroger. I love to coupon and Kroger’s is my hook up, but I tend to only buy bacon, maybe fresh gulf shrimp, laundry & cleaning supplies, and my boy’s foods they love. (they love Oreos and chocolate milk).

*Oh side note, when I say “boys” I mean my three-year old son and my Husband, who has the diet of a three year old.

My local Trader Joe’s

It takes me about thirty minutes to drive here, but it is so worth it. I bring my cooler bags for all the frozen stuff & meat. Saturday when I went, my husband stayed home with my son and for once I got to shop KID FREE! It was a treat let me tell ya! This is what I picked up:

It had added smoke flavor, which I didn’t read on the package, and the taste wasn’t for me. With the Texan’s and Cowboy’s playing this weekend, my husband wanted to grill! I had one HB patty with some yellow mustard, pickles and mixed greens. It was fabulous. Along with that I did treat myself to TWO jalapeno poppers with bacon and dairy free cream cheese. YUM.  I forgot to take a picture of this cream cheese, but this is the one I got from Trader Joe’s. (Thanks google for the pic) I purchased it for $2.49trader-joes-vegan-cream-cheese-review.jpg
